Chocolate Chip Baked Oatmeal Cups

These healthy oatmeal cups are a great way to start your morning or as a snack throughout your day. They are naturally sweetened with bananas with no added sugar, so they provide the perfect balance of slight sweetness with filling oats that will keep you fueled without weighing you down.

Ingredients
  

  • 2 cups old fashioned oats
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk (substitute with any type of milk if you prefer)
  • 1/2 tsp vanilla
  • 1 egg
  • 2 bananas (mashed)
  • 1 cup chocolate chips (dark chocolate is my favorite in this recipe, but any type of chocolate would work great)

Instructions
 

  • Preheat your oven to 375°F.
  • Mix together the oats, baking powder, and salt in a large bowl.
  • Add the milk, egg, vanilla, and mashed bananas.
  • Stir in the chocolate chips or any other mix-ins of your choosing.
  • Grease a muffin tin and pour in the batter to fill the tin almost to the top. The oatmeal cups only need room to puff up slightly.
  • Bake in 375°F oven for 20-25 minutes, until set and the sides of the muffins are light brown. Move to cooling rack to cool. These oatmeal cups can be eaten fresh from the oven or stored in the refrigerator.

Notes

Mix it up by adapting these oatmeal cups to flavor that you like – simply replace the chocolate chips with any mix-ins of your choice. Some of my favorite variations are apples and cinnamon (add one peeled, diced apple with 1 tsp cinnamon) or berries (add about 1 cup of fresh or frozen berries).
The batter can be prepped the day before and stored in the refrigerator overnight for an easy breakfast in the morning.
These oatmeal cups also freeze very well – just cool completely and then store in an airtight bag or container in the freezer until ready to eat. Leave in the refrigerator to defrost or pop into the microwave for a few seconds straight from the freezer.
